Creamy Cajun Chicken Pasta

Ingredients:

  • 2 chicken breasts (sliced thin)
  • 2 cups penne pasta
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt + pepper to taste
  • Optional: parmesan, spinach, or bell peppers

Instructions:

  1. Cook pasta; drain and set aside.
  2. In a pan, heat oil. Add seasoned chicken and cook until golden.
  3. Add garlic, sauté 1 minute, then pour in cream and Cajun seasoning.
  4. Simmer until thickened. Toss in cooked pasta.
  5. Top with parmesan and serve hot.

Turkey & Avocado Wraps

Ingredients:

  • Large tortillas or spinach wraps
  • 6 slices deli turkey
  • 1 avocado (sliced or mashed)
  • Lettuce, tomato slices, red onion
  • Ranch or mustard

Instructions:

  1. Lay out tortilla, spread sauce of choice.
  2. Layer turkey, avocado, and veggies.
  3. Roll tightly and slice in half.

Ingredients:

  • 1 rotisserie chicken (shredded)
  • 1 cup cooked rice
  • 1 cup canned black beans (drained)
  • 1/2 cup corn
  • Salsa or pico de gallo
  • Shredded cheese
  • Optional: sour cream, avocado

Instructions:

  1. Layer rice, beans, corn, and chicken in a bowl.
  2. Add salsa, cheese, and toppings.
  3. Microwave 1–2 mins or serve cold.

  • 2 large russet potatoes (baked or microwaved)
  • Shredded cheese
  • Sour cream
  • Green onions
  • Bacon bits (or turkey bacon)
  • Salt + pepper

Instructions:

  1. Scoop out baked potato into a bowl.
  2. Mash slightly, mix in toppings.
  3. Reheat if needed, top with extra cheese.

Ingredients:

  • 2 chicken thighs or breasts (cubed)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 clove garlic (minced)
  • 1 cup cooked rice
  • Broccoli or steamed veggies

Instructions:

  1. Cook chicken in a skillet until browned.
  2. Add honey, garlic, and soy sauce — simmer until sticky.
  3. Serve over rice with veggies.

Baked Salmon with Roasted Sweet Potatoes & Green Beans

Ingredients:

  • 1 salmon fillet (skin-on or skinless)
  • 1 small sweet potato (peeled + cubed)
  • 1 cup green beans (trimmed)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt + pepper to taste
  • Optional: lemon slices, fresh herbs (like dill or parsley)

Instructions:

  1. Preheat oven to 400°F.
  2. On a baking sheet, toss sweet potatoes in half the olive oil, garlic powder, salt, and paprika. Roast for 15 minutes.
  3. Add green beans to the same tray. Drizzle with remaining oil, season lightly, and push veggies to the sides.
  4. Place salmon in the center, season with salt, pepper, and lemon slices if using.
  5. Return tray to oven and bake for 12–15 minutes, or until salmon flakes easily with a fork.
